Deep Fried Wontons with Sweet and Sour Sauce

Wonton Filling

25o g ground pork
4 water chesnuts, chopped fine
1 green onion, sliced thin
15 ml soy sauce
10 ml cooking sherry
15 ml cornstarch
1/2 ml garlic salt
15 ml oil
30 wonton wrappers
--- oil for frying

Sauce

60 ml soy sauce
125 ml vinegar
125 ml brown sugar
45 ml ketchup
2 ml salt
125 ml red current jelly
30 ml lemon juice
15 ml cornstarch

Method

1. Heat 15 ml oil in fry pan, add pork and stir-fry (until meat loses reddish color), add water chestnuts and green onion, and stir-fry one minute.

2. Add soy sauce, cooking sherry, cornstarch and garlic salt at once, stir till thickened.

3. To prepare sauce, combine soy sauce, venegar, brown sugar, ketchup, salt, jelly, lemon juice, and cornstarch in small saucepan. Heat to boiling, stir constantly. When mixed, put on low heat.

4. When filling is cool, place a teaspoon of filling in the center of each wonton wrapper. Moisten edges.

5. To deep fry wontons. Heat 2 inches of oil in deep fryer to 375 degrees F. Deep fry 4-6 wontons at a time for 2 minutes or until they are crisp and golden.

6. Drain excess oil on wontons on crumbled paper towels.

7. Pour sauce into small serving bowl and put on a plate, surround the bowl with wontons. Serve.
