Artichoke Nibblers

1-6 oz. jar marinated artichoke hearts
1/2 small onion, finely chopped
1/2 clove of garlic, minced
2 eggs, beaten
25 ml fine bread crumbs
1/2 ml slat
1/2 ml each of pepper, oregano, tabasco sauce
250 ml sharp cheddar cheese, grated
15 ml fresh parsly, chopped fine

Method

1. Drain 1/2 of the liquid from the jar of artichokes and discard.
2. Put the other half of the liquid into a fry pan.
3. Add onion and garlic and saute.
4. Chop artichokes into quarters. Combine eggs, crumbs, salt, pepper, oregano and tabasco.
5. Stir in cheese and artichokes. Add onion mixture.
6. Pour into 8" x 8" buttered baking dish.
7. Sprinkle with parsley. Bake at 325 F for 30 minutes or until lightly set.
8. Coat and cut into 1" squares.
